Barbados’ Chefs Crank Up The
Heat At The 2008 South Beach
Food & Wine Festival

Barbados’ culinary masters, Chef Paul Yellin and Chef Peter Edey shook up South Beach with their spirited flavors as they presented signature dishes at the Seventh Annual South Beach Food & Wine Festival during February 21st-24th 2008 at the Publix Grand Tasting Tent.

The Food Network South Beach Wine & Food Festival is a national, star-studded, four-day destination event, showcasing the talents of the world’s most renowned wine and spirits producers, chefs and culinary personalities. Among them are Bobby Flay, Paula Dean, Govind Armstrong, Anthony Bourdain, Cindy Hutson, Michelle Bernstein, Cat Cora and Jean-Georges Vongerichten, to name a few.

Chef to the stars, Barbados’ own Paul Yellin is the author of “Infusion – Spirited Cooking” and more affectionately known as the Rum Chef. Similarly, the acclaimedBarbadian chef, Peter Edey has his own television show on island and has also appeared on The TODAY show in NYC.

Yellin and Edey’s mouth-watering samples included:

  • Flying Fish and Cou Cou, a national Barbadian dish
  • Souse (pork) with Steamed Sweet Potato
  • Coffee-rubbed Tenderloin with Cinnamon Plantains
  • Bajan Black Cake
  • Jam Puffs

An estimated 20,000 people attended the festival during the four days, and Barbados gave out a trip for two to the island valued at $12,000 to one lucky tasting patron.
